Edible Note: An ancient symbol of hospitality, mint was rubbed on tables or strewn on the floor so that the fragrance would welcome visitors (and mask any unpleasant smells). In Mexico, mint is called yerba buena (Spanish for “good herb”—we agree!) and most commonly refers to spearmint. There are more than 600 kinds of mint, including peppermint, spearmint, apple mint, pineapple mint and chocolate mint.
