Matcha Mint Pops

Ingredients

  • 2 cups full-fat coconut milk
  • 1 banana
  • 2 teaspoons matcha powder (Paulette’s favorite source for organic matcha is Encha in San Jose.)
  • 1 cup fresh mint leaves, packed
  • 3 tablespoons honey

We are seeing it incorporated into recipes from drinks to baked goods to sweet and savory dishes and—you guessed it—frozen pop treats too! Our summer-inspired frozen pop recipe by Paulette Phlipot blends in fresh mint to make it doubly cool.

Paulette’s Pop Tip: Although more expensive, consider buying stainless steel molds. You avoid using plastic and they bring you a lifetime of frozen goodness on the go! 

Instructions

Blend everything in a high-speed blender until smooth. Pour into popsicle molds, insert popsicle sticks, freeze until hard (at least 4 hours.)
