The Call of Celeriac

Celery root, also known as celeriac, is a variety of celery cultivated just for the root. Sometimes referred to as celery knob, its rough ugly brown hairy exterior belies a smooth, creamy white interior when peeled. Like eating a kinder, gentler celery, celery root has a mild taste that’s a mix of parsley and leaves and can be eaten cooked or raw. Even better, celery root is an excellent source of dietary fiber and potassium and contains significant amounts of vitamins C and B6.

“We used to be the biggest organic strawberry grower in our area in the ’90s. Now we do about 30 different crops,” says Christine Coke. “We do some specialty crops. I’m from Switzerland and I grew up with celery root. Dale didn’t know much about them, but I said ‘If we’re going to be together, we’re going to grow celery root.’”
