Spring Onion Strata

Artisan bread is sliced and layered with eggs and sweet, tender green onions. Use a loaf of Acme Green Onion Slab for layers of spring onion flavor. Assemble the strata the night before, then bake it in the morning.

Ingredients

SERVINGS: 6 – 8 Serving(s)
  • 8 eggs
  • 2 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 bunches green onions, sliced
  • 4 cups cubed Acme Green Onion Slab (or other ciabatta bread)
  • ¼ cup chopped flat-leaf parsley

Preparation

Lightly grease a 9- by 13-inch baking dish with olive oil or nonstick cooking spray.

In a medium mixing bowl, beat the eggs, chicken broth, salt and pepper. Stir in the green onions and cubed bread, making sure all of the bread gets coated with the egg mixture.

Pour the mixture into the baking dish, cover tightly and refrigerate overnight.

Preheat the oven to 350°. Uncover the strata and bake it for 45 minutes, until it has puffed up and turned golden brown on top. Sprinkle with chopped parsley and serve.
