Pineapple Ginger Wine Spritzers

Usually made from a mix of wine and half lemon-lime soda, wine spritzers tend to be quite sweet. This one is far more refreshing and light, since it's a blend of pineapple juice, white wine and sparkling water, with the added zing of fresh ginger juice. Of course, you can add agave syrup or honey to the mix if you like a sweeter drink.

Ingredients

  • 1 knob ginger, juiced
  • 2 750ml bottles Sauvignon Blanc
  • 1 half-gallon container pineapple juice
  • 2 liters sparkling water, chilled
  • Ice

Instructions

Pineapple Ginger Wine Spritzers

Makes 16 8-ounce drinks

1. Run the ginger through an electric juicer or use a mini chopper or fine Microplane grater to make a paste of the ginger, then place it in a piece of cheesecloth and squeeze out the juice into a bowl.

2. In a 1-gallon pitcher, combine 2 teaspoons of the ginger juice with the wine and pineapple juice.

3. Taste and add more ginger juice to taste.

4. Chill for at least 4 hours.

5. To serve, add a couple ice cubes to each glass, then pour in equal parts of the wine mixture and the sparkling water. Adding sparkling water just before serving will ensure that everybody gets a fizzy drink as the afternoon wears on.
