English Peas with Butter Lettuce and Prosciutto

Cooking peas and butter lettuce together is a classic French dish that can be served on its own or as a side dish. The prosciutto adds complexity to the flavor of farm fresh peas and lettuce.

Ingredients

  • 2 tablespoons butter
  • 1 ½ pounds English peas, shucked (about 1 cup)
  • ¼ cup water
  • Pinch of sugar
  • 1 small head butter lettuce, base removed and leaves sliced ½” thick
  • 3 ounces thinly sliced prosciutto
  • 1 teaspoon chopped fresh mint

Instructions

Wash but don’t dry the lettuce leaves.

Melt the butter in a medium saucepan over medium low heat. Add 2 tablespoons of water, the peas, a pinch of sea salt, and sugar.

Cover and cook for 5-10 minutes until the peas are starting to soften but still bright green in color.

Remove the lid, add the lettuce, prosciutto and mint and toss until the lettuce is just wilted.

Season with salt and pepper to taste and serve.
