Nourishing Pumpkin Soup
For this nourishing pumpkin stew, use a sweet and flavorful squash of the season. Dr. Abrams recommends Marina Di Chioggia.
Slice potatoes in ½-inch rounds. Steam over boiling water until tender (approximately 10 minutes). Allow to cool and then puree in a food processor with remaining ingredients until smooth. Adjust seasonings and add a little water if too thick.
