Instructions
Serves 4
For the honey syrup:
¼ cup honey
¼ cup water
For the cocktail:
½ cup Meyer lemon juice
4 ounces St. George Pear Brandy
1 (16-ounce) can Golden Gate Mighty Dry Hard Cider
For the garnish:
Bitter Girl Pear Jordan bitters
4 sprigs of thyme
Directions:
In a small saucepan, warm the honey and water over low heat. Stir just until the honey dissolves, and remove from the heat. Cool the honey syrup over an ice bath or in the refrigerator until well-chilled.
Set out 4 old fashioned glasses.
Fill a 1-quart Mason jar or large cocktail shaker with ice. Add the honey syrup, lemon juice and brandy. Shake vigorously, then strain the cocktail evenly between the glasses. Top off each glass with 4 ounces of cider.
Garnish each cocktail with 3 drops of bitters and a sprig of thyme. Serve right away.
