For the dressing:
- 3 tablespoons mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon Dijon mustard
- ¼ teaspoon fine sea salt
- 1 shallot, sliced thinly
For the salad:
- 1 pound broccoli florets, cut into 1-inch pieces
- 1 apple (any eating variety), chopped
- ¼ cup slivered almonds, toasted
- ½ cup pomegranate arils
Preparation
In the bottom of a large mixing bowl, whisk together the mayo, olive oil, lime juice, mustard, salt and shallot. Add the broccoli and apple chunks and toss to combine. Transfer to a serving bowl, sprinkle with the almonds and pomegranate arils and serve.
