From the moment I met up with Chef Xavier Salomon and Farmer John Muller at Farmer John's Pumpkin Farm in Half Moon Bay, you could tell two things; that he and Farmer John are both are passionate about food, and they are good friends that go way back. The two friends have been working together for about twelve years since Chef Xavier came to the Bay Area to create culinary magic at the Ritz Carlton, Half Moon Bay.

Farmer John Mueller and his farm created a friendship and a farm-to-menu partnership by growing the fresh local produce that Chef needs. Chef Xavier uses Farmer John's local and seasonal produce (which includes fall pumpkins) to create wonderful and innovative dishes as the Executive Chef of Navio, the fine dining restaurant in the Ritz Carlton Half Moon Bay.

Focusing on pumpkins this time of year, Farmer John shows his passion for all things pumpkin growing over 60 different varietals each year, including the giant pumpkin that can weigh up to 2,000 pounds. He explains that growing his giant pumpkins is a highly labor-intensive and emotional process as he tends to them daily and even names them. His grandchildren also get in on the fun by reading to the giant pumpkins.  (We hear it helps to help them grow bigger and stronger.)

On your next trip to the pumpkin farm, don't forget that all pumpkins are not equal, and not all are good for cooking. Farmer John notes that the pumpkins that make great jack-o-lanterns do not necessarily make good pumpkin bread.  Some are the best for the seeds, some are the best for cooking and menu planning with restaurant chefs like Chef Xavier, and some are the best for fall decorations.  You'll want to ask your grocer or in this case, the farmer, which ones are best for carving, and which ones are best for your pumpkin cravings.

Editor's Note: In 2020, after 17 years as Executive Chef for the Ritz Carlton in Half Moon Bay, Chef Xavier Salomon has headed south to Los Cabos Mexico.  Chef Salomon has been appointed to Executive Chef of Montage Los Cabos where he oversees the resort’s operations and restaurants.
