"Olio Nuovo" is often used as an umbrella term for new-harvest oils, but here in California the term reflects the Italian tradition of celebrating the first day of the olive harvest. California producers have adapted this time-honored tradition by offering freshly milled, unfiltered, minimally settled oils during the fall and winter season—creating greener, thicker, and fresher olive oil perfect for getting a true taste of the harvest.
“Olio nuovo translates as new oil, but it means much more than that,” says Oakland-based food professional and olive oil specialist Roberta Klugman. “In Italy, the first oil of the harvest with its fresh, bold flavors rewards hard work and signals a good year ahead. The first oil straight from the mill is cause for celebration, and at the table, it’s a magical gift.”
