Ingredients

Sweet Potato Hummus
  • 2 large organic sweet potatoes, well washed, unpeeled (skin has extra fiber and nutrients)
  • 1 (14-ounce) can organic chickpeas, drained and rinsed
  • Juice from 1 lemon
  • 1/3 cup raw organic tahini
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ground cumin
  • 2 garlic cloves
  • ½–1 teaspoon Aleppo chili pepper flakes
  • ½ teaspoon sea salt

Preparation

Slice potatoes in ½-inch rounds. Steam over boiling water until tender (approximately 10 minutes). Allow to cool and then puree in a food processor with remaining ingredients until smooth. Adjust seasonings and add a little water if too thick.
