New Seasons Market Evergreen Launches New Culinary Education Series with Chef Barbie Aknin

New Seasons Market Evergreen, at 5667 Silver Creek Valley Road, San Jose, will be hosting four classes by Chef Barbie Aknin in July.  The owner of Community Cuisine, Chef Barbie has provided cooking instruction in corporate settings and cooking schools more than twenty years. She has diplomas in restaurant and food management from West Valley College in Saratoga and a Diplome Etudes de Culinaires from LA VARENNE ECOLE DE CUISINE in Paris, France.

Classes can be taken individually or purchased together for a discount. Interested parties can register at the Solutions Counter in the store or at www.communitycuisine.com.

Fermenting 101: Sauerkraut
Fermenting vegetables is an age old practice of preserving the garden’s bounty. This method yields nutrient-dense foods that are alive with probiotics, vitamins, minerals and enzymes, all of which strengthen the immune system and your gut. Much like canning, once you know the technique, you can be as creative as you wish. In the two fermentation classes offered, attendees will learn about the health benefits and the basics of fermenting, taste flavored krauts and tasty snacks made with kraut, and make a pint of kraut with their choice of flavoring to take home.

Fermenting 102: Fermenting Vegetables with Salt Brine
Pickles and Italian Giardiniera were originally fermented in a salt brine. Now they are pasteurized and canned in factories losing all of the health benefits. Chef Barbie will lead class participants in making a pint of vegetables using an assortment of summer produce and snack on fermented crudités, dips and fermented hummus. Following the class, attendees will look at vegetables in a whole new way! They will be able to grab a cauliflower on their way home and have a healthy treat without lots of fuss in three days.

Knife Skills Class
Chef Barbie will teach class attendees how to buy, use, care for, and sharpen knives properly and safely. 
Would you like to be a faster cook and wash only one piece of equipment? We will discuss purchasing knives, care and safety. You will learn how to keep your knives sharp; a dull knife is the most dangerous of tools. We will chop, dice and slice and prepare a meal together. We will chop, dice, slice and prepare Spring Slaw and Minestrone Soup. Participants are welcome to bring your knives carefully wrapped in to the class for review. This is a great class for beginners and seasoned cooks alike. Everyone gets to practice. If you like, bring your knives (carefully wrapped) for review.

Summer Salads Cooking Class
Participants will prepare quick entrées and side salads using what's in season, including easy, healthy dressings. Get tips on enhancing flavor with acids, salts and oils. Come hungry!
