The menu for this dinner will begin with an amuse bouche of Coconut Watermelon Gazpacho followed by Roasted King Ora Salmon with marinated Ikura, fennel, sanguine and wasabi yuzu creme fraiche paired with a Sauvignon Blanc, Quintessa, "Illumination", Napa Valley 2016; Australian Lamb Chop with anticucho, cumin, carrots and aji amarillo with a Cabernet Sauvignon, Faust, Napa Valley 2014; American Wagyu Hanging Tender Steak with miso corn, sunchoke purée, piquillo and shiso chimichurri with a Quintessa 2014; and then a Chef 's Selection Trio cheese course paired with a Quintessa 2011.
